Can you get sick from eating raw buffalo meat?
ByI ordered a take out buffalo burger for lunch, got it medium rare, and when I got to work and ate it, it was completely raw on the inside (cold and looked like raw hamburger meat they sell in supermarkets). I was really hungry so I ate it anyway. How germ-prone is buffalo meat? I know raw beef is less dangerous than raw chicken…where is buffalo on that spectrum?

Buffolo isn’t beef it’s Bison meat which is the healthiest least fatting meat in the world.
But I have no idea I’m sorry.
and Ground beef you can eat raw but not al the time.
so I don’t think you will get sick or ill and if it does have an effect it woun’t have a large one.

I think you can get sick from eating any sort of raw meat, but I’ve personally never gotten sick that way. I’m not sure where it is on the “danger” spectrum, to be honest.
The important thing is that if you feel sick in the next few days, you should go to a doctor ASAP and mention that you ate raw meat and that might be why you’re sick.

You can get sick from any raw meat. However, if you’re in the US or some other highly industrialized country, the likelihood is much lower. Ordering your burger medium rare is really not the smartest of things anyway though. Ground red meat (beef, pork, bison, etc.) should ALWAYS reach an internal temperature of 165 degrees F for optimal safety. You can oder whole muscle red meat medium rare and be fairly safe because until the meat is cut into, the inside is sterile and only the outside contact surfaces (which get the hottest when cooking anyway) have the potential for bacterial contamination. However, since ground meat is mixed and made much smaller, even if just one piece of meat has bacteria on it, it mixes will all the rest of the meat and so all of it is contaminated.
And buffalo is about as dangerous as eating raw beef. Water activity is a good indicator of how good of a host a certain food product is for bacteria. Water activity ranges from .00-1.0 with 1.0 being equal to water; the higher the water activity, the easier it is for bacteria to grow (given other favorable conditions like pH, temperature, nutrients, etc). Red meat has a water activity of .98-.99 so bacteria really can grow well, the pH for ground meat is optimal as is nutrients, and, depending on what you cook it to, temperature could be as well. Medium rare only reaches an internal temperature of 145 degrees F so bacteria aren’t necessarily killed off and you could come down with a foodborne illness.

Bison or Buffalo also carry the E-coli bacterium. Never order any ground meat product at medium rare. Ground meats should always be well done…period!
