Copper also reacts to many ingredients in the kitchen like tomato products, vinegar, cream of tarter....so if you splashed anything like that on it you can cause it to discolor. Steam will also cause the copper to tarnish faster. I'd go for the pewter, save yourself a lot, and I do mean a lot, of polishing. The pewter one won’t tarnish.
